Last night we enjoyed our first roasted chicken from a Cornish Rock chicken we raised ourselves!

Roasted with thyme, rosemary and lemon it was very tasty, tender and moist. This was a little chicken harvested before it’s time. We have three more in the freezer, six from the same hatching that Paul will harvest today, and 23 more that will be harvested in early September.

Thirty-two chickens at one a week will last us until February. I think we’ll need a bigger freezer next year.
